LOS OCOTALES ESPADIN-CIRIAL
100% Agave Mezcal Artesanal sourced from San Dionisio Ocotepec, Oaxaca by Maestro mezcalero Adolfo Santiago. 60% Cirial, 40% Espadin, cooked in an underground conical oven, macerated using a Tahona stone, fermented in pine wood and distilled in Copper Alembic.
Its aroma offers up an olive profile, with subtle nuances of fruit, cooked chilies and herbs. On the palate it is honeyed yet bitter, with prominent notes of lime and tangerine skin, balanced with flavors of ginger, anise, epazote, kiwi and raisins. As it lingers, hints of molasses, cocoa, tobacco and mango emerge. The finish is sweet and salty, highlighted by pineapple, plus spicy notes of morita and mirazol chiles.
