Pijoan Vino Pelon 2022

Vinos Pijoan is a small family company established in 2002, at the beginning of the Mexican wine boom, dedicated to creating authentic wine with heart and integrity. Vinos Pijoan was started by Pau Pijoan, a Mexican veterinary researcher by trade with Catalonian roots. Without boasting about being an oenologist, his long career as a scientist laid the groundwork for a disciplined and methodical study in the art of winemaking.

Grapes from the Pijoan vineyard are crafted into natural wine. Featuring Syrah, Merlot, Grenache and a smidge of Moscato Giallo, the vines are cultivated with minimal human intervention and vermiculture techniques to encourage a harmonious local ecosystem, populated by native and wild vegetation. Following spontaneous fermentation, Pelón wine is bottled without filtration or stabilization additives.

The first aromas are peppery, featuring cardamom, black pepper, turmeric, and cinnamon. This leads into a fireplace-like warmth of chestnuts and walnuts with a cup of dark chocolate. The palate is crisp and brimming with flavors of juicy plum and black cherry, indicative of the Grenache and Merlot vines.
