The chitarra (pronounced key-tahr-rah) is a traditional wooden pasta maker dating back to the 1800s, originating in Chieti in Italy’s Abruzzo region. Named for its resemblance to a guitar, the chitarra looks like a double-sided harp, strung with parallel wires that cut pasta cleanly as the dough is pressed through.
Simple, intuitive, and deeply satisfying to use, this tool produces beautifully textured pasta with a rustic, handmade feel — the kind you can’t get from rollers alone.
How to use:
Roll pasta dough flat, then use a rolling pin to press it through the wires. The slanted center board allows the cut pasta to slide off easily. Flip the chitarra to choose your cut:
