"Crush On You" Chenin Co-ferment

Vineyard: Chenin Blanc is coming from Wilson Vineyard - Woods Ranch in Clarksburg, CA. The Wilson family has been farming land in Clarksburg for four generations. Deep alluvial mix of clay and some sand, washed down the river and into the Delta. Planted in 1998 and farmed organically. Warm days followed by cool nights, sitting right alongside the Delta waterway. Pears are coming from Ratzlaff Ranch, an apple farm in Sebastopol, in the rolling hills of West County Sonoma. Apples are being sourced by Aaron Brown of Bardos Cider, from feral & historical orchards in Sonoma County, California.
Vinification: Timing tends to be on our side with this one, in terms of all fruit being harvested around the same time to co-ferment. All fruit was pressed separately and fermented together in stainless steel where it stayed until it was bottled the last week of October with a dosage of fresh apple juice to finish fermentation in the bottle. Spontaneously fermented, unfined, unfiltered, no added SO2.
The Wine: Lightly spritzy with refreshing acidity and a crisp finish, notes of asian pear and tart apples.
