100% Organic Cabernet Sauvignon, Los Olivos, California
Destemmed, Pumped over once a day until the wine went dry. Primary fermentation takes place over 14 days on the skins. No sulfur added during fermentation. Each varietal was fermented separately and pressed and aged in neutral French oak. All wines went through full malolactic fermentation. Gentle pump-overs 2-3 times per day for 3 weeks. The wine was racked twice prior to bottling. Bottled unfined and filtered.
Aromas of Blackberry, current, violet, spice, black cherry. On the palate a refreshing lighter quality to Cabernet with soft tannins, juicy blackberry, cherry, and a touch of spice to add to the finish.
