Camazotz Oaxacan Rum
Camazotz Raw Cane Rum
Produced in Oaxaca, Mexico, Camazotz is a raw sugar cane rum rooted in traditional aguardiente methods. Crafted by Maestro Leoncio Gaspar, the sugar cane is grown without pesticides, pressed by hand using a mule-drawn mill, and fermented openly with wild airborne yeasts and spent cane. The juice is distilled in a copper alembic still, carried up a mountain, and bottled un-aged with nothing added.
Expressive and deeply tied to place, Camazotz drinks somewhere between agricole and cachaça, showcasing pure sugar cane character and Oaxacan heritage. It’s especially striking in a Daiquiri, where its structure and salinity really shine.
