Pekut & Carwick Bourbon Whiskey

Spirit Works Distillery is one of the only female-led distilleries in the U.S. and one of a handful of distilleries, craft or otherwise, prioritizing sustainability in the whiskey supply chain. Many of Spirit Works whiskies are made with organic and locally sourced grain, including from progressive CA growers practicing agroecological farming techniques and Bay Area maltsters using traditional techniques to supply local brewing and distilling operations.

This bourbon is made with all California grain, including malts produced at Admiral Maltings in Alameda, CA - one of only a handful of traditional floor maltings in the U.S. - and was disitlled from a mash of 60% corn, 20% rye (some of which was also malted), 15% wheat, and 5% malted barley. There's a lot of character in this 3-year, high proof whiskey! The nose and initial palate are full of cornbread and rich nougat, developing into floral, herbal, and fruity notes of honeysuckle, winter savory, and ripe peaches.
