Veso Tomato Vermouth

A limited-release vermouth (batch 002) built on two types of tomatoes: Purple Cherokee Heirlooms for decadent, savory meatiness and Early Girl for concentrated flavor and balanced acidity. They were infused in grape spirits for seven months, then pressed and blended with a 2023 Paso Robles Chardonnay. Young tomato leaves from Sunray Farm in Sonoma add an herbal, vegetal, almost minty character, kombu brings a touch of brininess and umami, and a quick infusion of red beets lends earthiness and a tinge of color. The nose is savory and aromatic, and the palate is rich, umami, and bright, finishing with a lingering tomato flavor.

Perfect in a tomato martini, or use it in place of any dry vermouth for a super savory kick. Try it in savory cocktails to amplify umami, or mix it with citrus or fruit to build depth and complexity.
