A blend of 85% Gravenstein apples and 15% Orange Muscat, a rare California varietal crossed from Chasselas, Muscat Blanc, and Petit Grains. The Orange Muscat was destemmed into stainless steel with daily pump-overs for gentle aromatic extraction, resting on the skins for seven days before pressing and combining with the Gravenstein apple juice to finish fermentation. It stayed in stainless steel until bottling in late October, with a dosage of fresh apple juice added to finish fermentation in the bottle. Spontaneously fermented, unfined, unfiltered, with no added SO2.

Expect orange blossom, tangerine, and flower fields in a glass.
