An audacious and contemplative white from winemaker Silvana Pijoan, La Poubelle (French for “trash can,” and named after her dog) challenges expectations of what Baja wine can be. Crafted with young Sauvignon Blanc vines grown in granite and sandy soils, this wine is intentionally oxidative — drawing inspiration from old-world French cellar traditions.

After a brief skin maceration, the juice ferments spontaneously in neutral French oak and ages for eight months on the lees, with barrels left untopped to invite gentle oxidation. The result is golden in hue and complex in flavor — with notes of honey, macadamia, baked apple, and citrus zest, lifted by vibrant acidity and a saline edge.

Unfiltered, unfined, and bottled with no added sulfites, La Poubelle is as much philosophy as wine — a reminder that beauty often comes from what others overlook.
