Aging: Bottled after 4 months in stainless steel barrel.
ABV: 7 %

Winemaking: Water is added to grape must and steeped for 2 days. Drained into steel barrels, Vermentino added to assist fermentation (Wild Yeast Ferment). Organic beet sugar and apricot puree added day of bottling to start second fermentation in bottle. Zero sulfur added.
