For more than a thousand years the Japanese have celebrated different phases of the harvest. Nagori refers to the last stage of the season. This gin is made from ruby grapefruit, Persian lime, blood orange, and late Washington navels, all picked on February 21 and macerated in biodynamic grape spirit within 24 hours. It captures bittersweet oils, concentrated sugars, and the saturated quality of winter’s last citrus
