Bright, playful, and quietly complex.

A hybrid between traditional sparkling wine and pét-nat, Swim blends wines from the 2021, 2022, and 2023 vintages, fermented and aged in barrel to build texture and depth before finishing fermentation in bottle. A small amount of yeast and sugar were added at bottling—just enough to create gentle bubbles—then left on sediment to continue aging and developing flavor. The sugar ferments completely, resulting in a dry wine with no residual sugar.

Albariño brings lift, acidity, and juiciness, while Pinot Noir adds body and depth over time. The result is a highly textural sparkler with notes of citrus, green apple, lemon crispness, subtle confectionary tones, and hints of yeast and cooked fruit.

Light sediment is natural—no need to disgorge.

Varietals: 41% Albariño, 21% Pinot Noir, 14% Chardonnay, plus Primitivo, Carignan, Pinot Grigio & Chenin Blanc
