“El Carbónico” Syrah & Grenache 2024
Vinos Pijoan “El Carbónico” 2024
Valle de La Grulla, Baja California, México
Vibrant, chillable, and full of life — El Carbónico is a co-ferment of Syrah and Grenache from 20-year-old vines rooted in granite and sand. Made using carbonic maceration, this natural red bursts with energy: sour blackberry, strawberry syrup, banana gum, and a hint of black pepper.
Crafted by Silvana Pijoan, one of Mexico’s most forward-thinking winemakers, this wine reflects her belief that innovation and climate resilience can taste delicious.
Aged briefly in neutral oak and bottled unfiltered with no added SO₂, it’s the kind of wine that begs to be served cool and shared among friends.
Style: Juicy, carbonic, natural
ABV: 12.8%
Best with: Tapas, grilled chicken, cured meats, or summer afternoons.
