Cheramie Rum Blanc

In 2018, Louisiana's largest distillery - Porchjam - began tapping into the yearly sugarcane harvest nearby to distil fermented fresh cane juice. This resulted in the creation of Cheramie Rum, a 100% Louisiana-grown and made beverage, despite the majority of this plant's juice being processed to sugar. The quick production process of harvesting, crushing, fermentation and initial distillation takes place within a limited timeframe between October and January, requiring stills to work long hours to protect this short-lived juice.
