Clairin Sajous is an artisanal, unaged white sugarcane spirit produced in Haiti by distiller Michel Sajous at Distillerie Chelo. It is crafted from organically grown Cristalline sugarcane, fermented with wild ambient yeast, and double-distilled in a traditional pot still.
Production and Terroir
  • Location: Distillerie Chelo in Saint-Michel-de-l'Attalaye, northern Haiti.
  • Cane Variety: Pure, unhybridized Canne Cristalline heritage sugarcane.
  • Process: Hand-harvested cane pressed for fresh juice, spontaneous wild fermentation, and open-flame pot distillation bottled at natural high proof (around 54%–56% ABV)
