Winemaking: Water is added to grape must and steeped for 2 days. Drained into steel barrels,
unfermented juice added to assist fermentation (Wild Yeast Ferment). Organic beet sugar and
lime puree added day of bottling to start second fermentation in bottle. Zero sulfur added.
Farming: All vineyards farmed Organic
Aging: Bottled after 4 months in stainless steel barrel.

ABV: 7 %
