2022 Fermented Ribolla Gialla


Tasting notes

Refreshing yet pleasantly complex. Apricot, bergamot orange, dried herbs and a hint of beeswax mingle with a lingering pineapple jalapeño finish. Pair with trout or spring pea pasta after a salty day with toes in the sand.

This year’s Ribolla Gialla spent the same amount of time on the skins as last year’s grapes, but I was curious to see what textures, fragrances, and longevity this site could produce so opted to leave 100% of the grapes to macerate on their skins.

I love Ribolla because it has pronounced savory qualities, while also possessing the acidity and body to balance it out. The 2022 Ribolla Gialla is a richer, bolder wine with a complex finish. Definitely a foodie’s kind of wine.
